- Wine Advocate: There are 125 cases of the 2007 Pinot Noir Sine Cera Fiddlestix Vineyard, produced from Burgundy Dijon clones 113 and 667. Aged 60% in new French oak, this unfiltered wine displays spicy, earth, almost primordial, meaty beef bouillon notes followed by hints of sassafras, pomegranate, and black cherries. The muscular, dense wine is broad in substance and texture but needs 1-2 years of bottle age. It is not nearly as expressive as Lato’s other Pinot Noir, but it is ‘packed and stacked,’ so to speak, and should age beautifully for a decade or more.

Paul Lato is a former sommelier who studied wine extensively and traveled the world before starting his winemaking operation on the Central Coast in 2002. Though their style is inspired by the balance and harmony, they also seek to capture the intensity of flavor that is a hallmark of sun-kissed California vineyards. Through small-lot boutique production, minimal intervention in the winery, and purity of intention, the team works to achieve elegance in the bottle that showcases the unique qualities of these amazing sites. The ultimate goal is to create wines that are seamless and textural with the structure and balance to complement fine cuisine.
